The first time I saw this dip was at my older sister's house, served in the middle of a sourdough bread bowl with scallions and celery arranged around it. I take this dip to any outdoor (and most indoor) occasions - I buy all the ingredients the day before and leave the spinach out to thaw. It really does need the two hours in the fridge to mingle the flavors, but straight-from-the-fridge-Dip is cold, I usually pull it out of the refrigerator about a half-hour before serving.


Spinach Dip

1 10 oz package frozen chopped spinach, thawed and drained
1 can water chestnuts, chopped
3 green onions, chopped
1 16 oz sour cream
1 cup Best Foods Mayonnaise[1]
1 package Knorr Vegetable Soup Mix

Mix all together, place in refrigerator for 2 hours to let the flavors mingle.

[1] Actually, Dukes Mayonnaise is better, but Best Foods is easier to get out West.
