This is the first super-sandwich I made for myself. It takes time and effort, but it's a killer. [1] If you want to take it to work, to reheat in a microwave, I'd suggest toasting the bread first (at home if you have to), and warming everything else up at once, then pile it on the bread. Otherwise,
soggy soggy bread.
The Sandwich
1 skinless, boneless chicken breast, pounded flat (3/8") [2]
2 slices sourdough bread (sandwich sliced)
1 slice provolone cheese
3 slices turkey bacon
1 slice red onion (get all the rings)
lo-fat mayonnaise
In a skillet, cook the turkey bacon until ALMOST crispy (I use med-lo heat).
Remove bacon from skillet, and fry the chicken, seasoning with Mrs. Dash. When the chicken is almost
done, remove from skillet, slice lengthwise into 1/2" strips, and return to frying pan. Fry until chicken is
no longer pink, and remove from pan.
Set oven to "broil" and lightly toast the two slices of bread.
Pick a piece of bread to be the bottom, coat it with mayonnaise, then lay the bacon slices on it.
Layer with the chicken
pieces, and then the red onion, and then the cheese.
Place the stack into the oven, and broil until the cheese is melted. Top with second slice of toast,
and serve.

[2] I generally put the chicken in a zip loc bag, then in another one. If you don't have a tenderizer, use a frying pan. Whack it good. If you do have a tenderizer, don't use the pointy side! That's for red meat! Use the flat side. [3]
