Mini-Reubens

several slices of mini-rye bread [1]
mustard (yellow)
thousand island dressing
corned beef, sliced thin
swiss cheese in 2" squares
sauerkraut
Lightly toast the mini-rye bread in a broiler, then spread with yellow mustard. Spoon on a light coating of sauerkraut, then a small pile of corned beef and top with a square of swiss cheese. Broil until cheese is melted, spear with a toothpick, and serve with a side of thousand island dressing for dipping.

[1] Mini-rye bread is usually about 2" square and is sometimes in the snack aisle.
